This is a seasoned soy bean paste-style condiment made from soybeans that have been aged in soy sauce and then mixed with shichimi togarashi - a blend of chili pepper, sansho pepper, sesame seeds, poppy seeds, orange peel, nori, and ginger.
Low-temperature aged Shinshu soybeans are combined with the richly aromatic, deep-flavored shichimi spice from the long-established spice maker “Yawataya Isogoro,” creating a well-balanced seasoning with rich umami and a distinct spicy kick.
It works perfectly as a rice accompaniment, and can also be used as a substitute for soy sauce in stir-fries and mixed dishes.
