The key feature of this Okazu Miso is the use of domestically grown Kujo green onions and long green onions. Kujo green onions are rare and difficult to source, but their natural sweetness and aroma make them a luxurious choice.
Because the dish uses a large amount of onions, extra effort is taken to reduce their moisture, which enhances the sweetness and creates a chunky, satisfying texture.
The miso used is Shinshu miso, with red and white varieties chosen depending on the ingredients. For best flavor, try warming it on grilled chicken in a toaster oven until slightly browned, simmering whole onions in broth and topping with Okazu Miso, or spreading it on crispy fried tofu, rolling it up, and securing with a toothpick.
