All flavor ingredients are domestically sourced, including bonito flakes from Makurazaki, Kagoshima Prefecture, Japan’s top bonito producer, and Hokkaido kelp.

All flavor ingredients are dried to 5% moisture to remove fishiness and concentrate umami.

Bonito, mackerel, horse mackerel, and soda-bushi flakes are first shaved, then finely powdered a second time, maximizing the extraction of umami when used in cooking.
