Carbonic maceration is a fermentation technique in which whole grapes ferment in a CO₂-rich environment before being crushed. This process enhances fruit-forward aromas, reduces tannic bitterness, and produces wines that are lively, aromatic, and approachable, with a signature juicy character.
Natural wine refers to a minimal-intervention approach to winemaking that uses organically or biodynamically grown grapes, native yeasts, and no additives or filtration.
